Granola Bars

The great thing about this recipe is that you can do so many variations!

6 1/2 cups rolled Oats (or combination of oats and other whole grains)
1 1/2 cups Whole Wheat flour (or all-purpose)
1 1/2 tsp. baking soda
1 T. Vanilla Extract
1/2 cup vegetable oil
1 cup honey
1 tsp. cinnamon
3 cups Raisins

**replace cinnamon and raisins with any variation of goodies you want!  Dried fruits and berries, sunflower seeds, chocolate or butterscotch chips, etc.

Preheat oven to 325*.  In a large mixing bowl combine oats, flour, baking soda, and any spices you want to use.  In a seperate bowl, combine vanilla, oil, and honey.  Pour wet mix into dry and stir to combine.  Stir-in any add-ins you want to use.

Spray an edged cookie sheet with cooking spray and press VERY firmly into cookie sheet.  Bake at 325* for 18-20 minutes until top is turning golden brown.  Remove from oven firmly press down bars again (using another cookie sheet or bottom of a glass or something) and allow to cool for 10-15 minutes and then cut into bars (they are hard to cut if you allow it to completely cool).  Allow to finish cooling completely before removing from pan.
