Spinach Tortillas

3 cups spinach (fresh only)
1 T. vegetable oil
3 to 3 1/2 cups flour
1 T. salt
1/4 cup shortening or vegetable oil
1 cup water

In a food processor, puree the fresh spinach and 1 T. vegetable oil. Mix with all other ingredients. Start with 3 cups of flour. Continue adding flour until dough pulls away from the sides of the dough. Divide into 8 balls and allow to sit for at least an hour. Roll out. Cook in hot skillet until tortilla bubbles, flip and cook other side.
