1 quart (32 oz) Peaches
1 C. sugar
1 C. oil
1 T. Ener-G Egg Replacer (or two eggs)
4 C. flour
1 t. salt
4 t. baking soda
1/8 tsp. allspice
1/8 tsp. cinnamon
1/4 tsp. nutmeg
Put the peaches, juice and all, into the blender and puree. Add in sugar, oil, and Ener-G egg replacer into the blender and mix together.
In another bowl, combine flour, salt, baking soda, spices. Pour wet ingredients into the dry ingredients and mix together.
Bake in a greased 9x13 pan at 350 F. for 35-40 minutes. Cool and frost.
