5 cups flour (any mix of AP and/or Whole Wheat will do)
1/2 cup shortening
2 tsp salt
1.5 to 2 cups boiling water
Mix together flour, shortening, and salt to create a crumbly mixture. Add in boiling water and mix. Start with 1.5 cups and add more if the mixture seems dry. Knead until the dough is smooth. Cut into about 16-20 pieces depending on how big you want your tortillas. Allow them to sit for at *least* one hour. Roll out the tortillas so they are very very thin. One at a time, put them in a hot skillet. When the tortilla begins to bubble (takes barely a minute), flip it over and cook the other side quickly. Do this for each tortilla.
