1 lb. ground beef
1/2 onion, chopped
2 cans condensed tomato soup
2 cans green beans
2 lbs potatoes
4 T. margarine
rice milk
1/4 lb. shredded cheddar cheese
Peel and cook potatoes. Mash with margarine and rice milk (or regular milk!). Amount of rice milk depends on how well you drained your potatoes, and how creamy you like them.
Brown meat and onion. Dump in tomato soup and green beans. Heat through. Put mixture in oven safe casserole dish. Spoon mashed potatoes on top and sprinkle with cheese. Cook at 350* for 30 minutes - until heated through.
If you have a dairy allergic child then leave the cheese off or make one for them in a separate dish.

Just throwing out a couple of ideas.... This is really close to my Mom's recipe, which I rarely see. We use tomato sauce instead of soup. She just uses it plain but I put some italian seasoning in it so it tastes more like a marinara sauce. My cousin uses brown gravy, which I've had once and it's really good.
Hi There, my son has a dairy, egg and peanut allergy. I LOVE your blog. Its just what I need to help me with my dinners.
My question is, do you use rice milk in your potatoes instead of soy milk for any reason. We have never tried rice milk for anything and am curious in its uses.

I used rice milk for the sole reason that up until a year ago, my daughter was allergic to soy. There is no reaon you can't use either rice or soy milk. I use them interchangably now that my daughter has outgrown her soy allergy.
