1 lb. frozen corn (or 2 cans)
2 cans beans (any type), rinsed and drained
2 stalks celery, chopped
1/2 red onion, chopped
1 cup apple cider vinegar
1/2 cup vegetable oil
4 cloves garlic, minced
2 tsp. oregano
1 tsp. pepper
1 tsp. cumin
1 tsp. yellow curry powder
Mix up corn, beans, celery, and onion.
Mix all other ingredients together and pour over corn/bean mix.
Put in fridge for a few hours.
Serve cold.
