2 lbs b/s chicken breasts
salt & pepper
2 T. olive oil
6 cloves garlic, minced
1 tsp ground cumin
1/2 onion, chopped
2 limes
1 can coconut milk
1 tsp. kosher salt
Season chicken with salt and pepper and brown in olive oil. Remove chicken. Put garlic, cumin, onion in skillet and saute. Add in lime juice, coconut milk, and kosher salt. mix well and return chicken to pan. Simmer until chicken is fully cooked and sauce is slightly thickened. Serve sauce over rice and chicken.
