1.5 cups white rice
3 cups water
4 tsp. fresh chopped cilantro
Juice from 2 limes
1 tsp kosher salt
Combine rice and water in pot. Bring to boil. Reduce heat to med/low and cover. Allow to simmer for 15 minutes. Turn off heat and allow to sit for at least another 5 minutes. Fluff rice with fork and carefully mix in salt, cilantro, and lime juice.
