Chocolate Snack Cake

1/2 cup sugar
1/2 cup water
2 T. Plus 1 tsp. vegetable oil
1 1/2 tsp. White vinegar
1/2 tsp. Vanilla
3/4 cup all-purpose flour
4 1/2 tsp. Baking cocoa
1/2 tsp. Baking soda
1/4 tsp. Salt
Confectioner's sugar, optional

In a small bowl, beat the sugar, water, oil, vinegar and vanilla until well blended.
Combine the flour, cocoa, baking soda and salt, gradually beat into sugar mixture until blended.
Pour into a greased 9 in. x 5 in. loaf pan. (I saw the amount of batter and disagreed with this at once. I used a mini-loaf pan and it was perfect)
Bake at 350 degrees for 25-30 minutes or until a toothpick inserted near center comes out clean.
Cool 10 minutes before removing from pan to a wire rack to cool completely.
Dust with confectioners sugar if desired.
