1/2 cup margarine
1 T. vinegar
1 cup rice milk
1 -2/3 cups flour
2/3 cup unsweetened cocoa powder
1-1/2 cups sugar
1-1/2 tsp. baking soda
1 tsp. salt
2 tsp. Ener-G Egg Replacer
1/4 cup water
1 teaspoon vanilla
1/2 cup water
1/4 cup applesauce
Put vinegar in cup and add rice milk. Preheat oven to 350 degrees. Place flour, cocoa, sugar, baking soda, and salt in large bowl and mix together.
Mix Ener-G Egg Replacer and 1/4 cup water until smooth.
Add margarine, vanilla, vinegar/rice milk, 1/2 cup water, applesauce, and mixed egg replacer to dry ingredients in bowl. Beat with electric mixer. Pour into greased and floured pan.
Bake for 30 to 35 minutes at 350 degrees, or until wooden toothpick inserted in center of cake comes out clean. Remove from oven and let cool in pans for 5 minutes. Remove from pans and cool on cake rack until cool.

Thanks for all the good recipes. My question for the chocolate cake is that there are two entries for water 1/4 and 1/2 cup. Is it some kind of typo.

nope that is correct. First you mix the 1/4 cup to make the egg replacer, and then the 1/2 cup is mixed in later.
